Cinnamon is a well-known spice, which is obtained mainly from two types of cinnamon – the Ceylon cinnamon (Cinnamomum zeylanicum) and the Chinese cinnamon (Cinnamomum cassia). Chinese cinnamon is less suitable for consumption because it contains markedly higher levels of moderately toxic coumarin substances that can cause liver and kidney damage at higher doses and potentially act carcinogenic.

Ceylon cinnamon contains extremely low coumarin content and is therefore suitable for use in the production of high-quality essential oils, whisch can also be used at certain doses for consumption. Cinnamon is one of the oldest known spices, since it is supposed to be used by the Chinese already 5000 years ago, and it is supposed to be brought to Europe by Arab traders. From the 16th to the 18th century, cinnamon was known as an extremely expensive and valuable spice. In traditional medicine, the essential oil is obtained from the ceylon cinnamon crust.

The main active compound of the cinnamon bark essential oil, which is responsible for its beneficial effect on the human body, is cinnamaldehyde.
